calorie The amount of heat neeed to raise the temperature of one gram of water, at or near the temperature of maximum density, by one degree centigrade. The standard calorie is also called a "small calorie" to distinguish it from the "large calorie," or "kilogram calorie," which is the amount of heat required to raise one kilogram of water one degree C; capitalization of the word calorie indicates a kilogram-calorie.
