aliphatic compound A major class of organic compounds that includes all those with carbon atoms linked in straight or branched open chains. Aliphatic compounds include alkanes, alkenes, or alkynes, or their derivatives. The other classes are alicyclic, heterocyclic, and aromatic compound.
