Human pancreatic lipase.


Lipase is an enzyme, secreted by the pancreas and the glands of the small intestine, that breaks down fats into glycerol and fatty acids during digestion. As the fat is normally water insoluble, lipases act relatively slowly on the surface of a fat globule. They occur widely in oil seeds and are involved in germination.
